Fat Friday #45 Chewy Chocolate Chip Cookies

I've finally sorted out my recipe book and finally found an old recipe I've never tried before. A cookie recipe that I found jotted down on a sticky note was hidden in the recipe book page. If its worth writing down, then its worth a try, right? It actually worked out really well. The perfect cookie, just chewy in the middle and crispy around the edge. Great to start a weekend, or ruin a diet. 



Recipe: Chewy Chocolate Chip Cookies
Makes 12-15 cookies (Found in my recipe book, not sure where it came from) 
Ingredients:
  • 250g plain flour
  • 2g baking powder
  • 170g unsalted butter
  • 220g brown sugar
  • 100g caster sugar
  • pinch of salt
  • 1 egg yolk
  • 1 egg
  • 1 teaspoon vanilla essence
  • 335g chocolate chips (I used a mix of white, dark and milk chips)


Equipment

  • Baking sheets lined with baking parchment x 2 
  • Sieve
  • Bowl x 2
  • Microwave
  • Wooden Spoon
  • Wire Rack 


1. Preheat the oven tp 325f/165c/ Gas Mark 3. Grease and line the cookie sheets. 
2. Sieve the flour, baking powder, and salt into a bowl. Set aside. 
3. In a separate bowl, melt the butter in the microwave until a liquid. 
4. Add both sugars to the melted butter and mix throughly. 

5. Beat in the egg, the egg yolk, vanilla extract until fluffy.
6. Mix into the dry ingredients into the batter until combined. 
7. Stir in the chocolate chips by hand.
8. Flour your hands a little, then roll the batter into 1 inch balls. Space them 3 inches apart on the baking sheet. 
9. Bake for 15-17 minutes in the oven or until the edges are lightly toasted. The middle should be soft but not gooey. 
10. Once you remove the baking sheets from the oven, leave the cookies to cook for a further 10 minutes before transferring to wire racks to cool.

The Cake and Bake Show Haul 2015

Well I've had fun! Stuffing my face with cake and free samples. Did any of you readers get the chance to visit the Cake and Bake Show in London this year? My friend Lucy and I are making this an annual 'thing' (You can read last years post here). I was hoping that I would do a video on it... until my camera broke.

Thats right. On the one day of filming I REALLY  needed a good camera... erg. Tech. Such is life. I thought I would do a blog post on what I purchased.


Firstly, food because... food. I grabbed some Emily Apple and Banana Fruit crisps. But these are the best crisps I've ever had. They were just soft enough in texture not to be soggy but crisp enough to crunch on and not break your teeth. The flavours are true fruit flavours. Seriously, totally worth buying! 

I got a super weird gizmo. Its a peeler. BUT NOT JUST A PEELER! Its a julienne vegetable and fruit peeler with a cool attachment to make noodles from veg. Lucy was full on impressed with this, that she didn't hesitate in buying it. I was convinced to get one also and the peeler does assist me in daily cooking tasks.

I also got a new piping bag and nozzles... pretty standard. 


For my Halloween bakes this year, I got some pretty sprinkles and cupcake cases from one of my personal favourite places to shop, Scrumptious. I bought some green, purple and orange sprinkles as well as some jazzy violet sprinkles. They have a great selection of sprinkles, decorating materials and cases. I did get some adorable ghostly cupcake cases as well as some Christmasy ones (don't judge me I know its only October). 

To stuff my face with, I got marshmallows from both 'The Marshmallowist' and 'The Marshmallow Company'. From the Marshmallowist, I got strawberry and basil, blueberry and gin, lemon and coconut flavours. Now, I must be truthful, the flavours didn't really come through apart from the coconut. I haven't tried 'The Marhmallow Company' marshmallows yet but I will do and will add what I think here.

I did get some special icing sugars, like I do every year, from another one of my favourite companies: Sugar and Crumbs. I bought: 'Santa's Snowball' which tastes like white chocolate and marshmallows (yum!!), 'Christmas Punch' which tastes like mulled wine and lastly, 'Apple Crumble'... which is what you expect. They make great buttercreams, or as a substitute for caster sugar in cakes.

Fat Friday #40 Chocolate Pumpkin Brownies

Its only 2 more weeks until October and already all I hear and see is pumpkin spice. Pumpkin Spice. Pumpkin. Spice. Spice with Pumpkin. EVERYWHERE! But I'm a fan of pumpkin spice, so I'm so happy with all of its sweet and spiceness in my life. 
This weeks recipe is a spiced pumpkin brownie, it takes a long while to bake as with most brownies but the result is worth it.

Recipe: Makes 30 small brownies (adapted from an old recipe I found in my recipe file.)

Pumpkin Cream Cheese Mix:
  • 85g cream cheese
  • 1 tablespoon unsalted butter
  • 112g caster sugar
  • 1 egg
  • 220g pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger 
  • 1 tablespoon plain flour
Brownie Mix:
  • 187g plain flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon of salt
  • 168g dark chocolate, chopped
  • 170g unsalted butter
  • 506g caster sugar
  • 4 eggs
  • 60ml milk
Equipment:
  • Brownie tin lined with silicone paper
  • Mixing bowl x 3
  • Saucepan with hot water and a heatproof bowl on top
  • Spatula
  • Hand held electric whisk/wooden spoon
  • Large spoon
  • Wire rack
1. Preheat oven 325f/160c/Gas Mark 3. Grease and line the brownie tin.
Pumpkin Cream Cheese:
2. In a mixing bowl beat the cream cheese and 1 tablespoon of butter until well combined. 
3. Add the sugar and beat again until fully incorporated. 
4. Beat in the egg, pumpkin puree and spices.   
5.Stir in the tablespoon of plain floor and set aside this cream cheese mixture for later.

Brownie Mix:
6. To melt the chocolate, place in a heatproof bowl above a saucepan of boiling water and stir it occasionally.  
7. While you wait for the chocolate to melt, in another bowl add all the dry ingredients and set aside.
8. In the final bowl, add the sugar and eggs to whisk together until it becomes pale. 
9. Once the chocolate has melted, add to the egg mixture. Beat in the milk.
10. Beat the dry ingredients to the chocolate mixture. The brownie mixture is complete.

To Finish: 
11. Spread the brownie mixture into the tin. Spoon the pumpkin cream cheese on top of the chocolate mixture and swirl through.
12. Bake for an 1 hour and 10 minutes or until the middle is just set when shaken. Its best to check it after an hour depending on your oven. 
13. Cool the whole tin on a wire rack until cool. Cut, and serve up the spiced pumpkin goodness.

Fat Friday #18 Rice Pudding Terrine served with a Salted Liqorice Parfait and Bitter Chocolate Sorbet


Welcome to Novembers last Fat Friday. This quite an usual dessert, it sounds like something that would grace the table of a nice little kitch restaurant. Well for now it will grace this blogs Fat Friday #18. I was not convinced to start with, but tasting the finished dessert was sweet, salty and creamy all in one. Its a great dinner party dessert and will impress dinner guests. Tuille is a type of very thin biscuit that can be shaped as soon as it comes out of the oven. However, in this recipe they are kept straight for height. Also for future reference, a parfait is a type of mousse and as Donkey says: "Everybody like parfait!"

Recipe: Makes 1 terrine, which will serve 6-8 people (recipe kindly  provided by my pastry tutor).

Rice Pudding:
·       50g sugar
·       75g risotto rice
·       350ml milk
·       100ml double cream, plus 100ml extra lightly whipped cream
·       1 ½ leaves gelatine
·       1 vanilla pod split lengthways

Pastry Cream:
·       100ml milk
·       75ml double cream
·       40g sugar
·       1 egg yolk
·       5g cornflour

Rice Tuilles
·       35g egg whites
·       40g icing sugar
·       100g reserved rice pudding
Salted Liquorice parfait
·       200ml double cream
·       100ml water
·       150g sugar
·       6 egg yolks
·       40ml liquorice essence
·       Fine sea salt

Bitter Chocolate Sorbet
·       750ml water
·       250ml milk
·       50g sugar
·       75ml glucose
·       100g cocoa powder
·       240g bitter chocolate

Equipment:
·       Saucepan
·       Rubber spatula
·       Bowl x 3
·       Blender
·       Pastry brush
·       Baking sheet
·       Whisk
·       Measuring jug
·       A square container that is suitable for freezing x 2
·  Ice cream machine
·  Fine sieve
 

For the rice pudding
1.    In a saucepan, simmer the pods, milk, cream, rice and sugar for 20 minutes until thick and creamy. 
2.    Remove from the heat and reserve 100g of the rice pudding for tuilles.  
3.    Place the gelatine in cold water until it is soft and add to the remaining rice pudding. Place both the rice puddings in the fridge to cool.
For the pastry cream:
1.    Bring the cream and milk to the boil.
2.    Whisk the egg yolk, sugar and flour.
3.    Combine the two mixtures and return to the pan until thickened. Leave to cool
For the rice tuille:
1.    Place the egg whites, sugar and rice pudding into a blender and puree to a smooth-ish texture.
2.    Chill in the fridge for 1 hour.
3.    Brush onto a sill matt using a pastry brush into a thin strips and bake on gas mark 3/170c/ 325f for 5 minutes or until golden brown.
For the parfait:
1.    Whisk the cream to ribbon stage. So almost whipped but not quite there.
2.    Place the sugar and water into a pan and cook to a deep caramel.
3.    Whisk the egg yolks until pale.
4.    Once the caramel is ready, slowly add the eggs whilst whisking.
5.    Fold in the cream and essence and place into a square shaped container and freeze.
Bitter Chocolate sorbet:
1.    Place the water, milk, sugar and glucose in a pan and bring to the boil.
2.    Whisk the cocoa powder into the milk mixture and pour the hot liquid over the chocolate to melt it. Whisking as you go.
3.    Strain through a fine sieve and freeze in an ice cream machine.
To Serve:
  1. Cut the rice pudding into a rectangle on a plate.
  2. Cut the parfait into a rectangle shape and place directly place on top of the pudding. Make sure its not too thick.
  3. Scoop a little of the ice cream and place on top of the parfait.
  4. Quickly place a tuille biscuit on top. Nom.

Fat Friday #17 Autumn Strudel


Welcome to that time of the week! It's Fat Friday! This weeks recipe is a great recipe to do with a friend, as you'll need some help with the strudel pastry. Its tons of fun to stretch and play with!
Recipe: Makes 4 large or 8 small strudels
Strudel Pastry:
·       250g Plain flour, sieved
·       1 egg
·       30ml vegetable oil
·       25g melted butter, plus a little extra
·       113ml water
·       100g poppy seeds

Spiced Apples:
·       3 apples cored, peeled and cut into chunks
·       20g raisins
·       20g apricots cut into pieces
·       100g granulated sugar
·       30g water
·       A pinch of cinnamon

Equipment:
·       Chopping Board
·       Saucepan
·       Wooden Spoon
·       Measuring Jug
·       Teaspoon
·       Tablespoon
·       Timer
·       Baking sheet lined with silicone paper
·       Pastry Brush
·       Fork
·       Loaf tin lined with silicone paper
·       Knife

Apple Filling

1.Place all of the filling ingredients in a saucepan and cook until apples are cooked through and the mixture is slightly mushy.
2.Put aside in bowl to cool and place into the strudel pastry.

Strudel pastry
1.Sieve the flour into a bowl.
2.Add the egg, oil, water and butter and mix with your hands to form a dough.
3.Knead for 5 minutes until elastic.
4.Rest in the fridge for 20 minutes.
5.Once rested, roll the pastry out on a floured surface until ½ inch thick.
6.Preheat the oven to Gas Mark 3/ 170c/325f
7.Stretch the dough by hand until it is as thin as paper.
8.Brush the pastry with a little melted butter
9.Cut the pastry into long oblongs. Spoon in the apple filling across a little of the pastry and roll into a cracker shape.
10.Brush with melted butter and sprinkle with poppy seeds.
11.Place on a baking sheet and bake for 20 minutes
