Penny's Top Ten Tips: Autumn Activities: Part 1 On your Own


Welcome to a Top Ten Tips! This week is about fun things to do while the weather is poor. In fact as I'm writing this post, its horrid outside. Its cold, wet and windy out there. But being cooped up inside can get a little boring, so lets get down to the tips.

1. Spa evening-
Grab your face pack and chill. Having a pamper evening will recharge your batteries after a hard day at work. It's so relaxing to get your nails done, maybe have a bubble bath with a good book.  

2. Learn a new skill-
Having lots of time indoors gives you time to learn something you've always wanted to do. In my case, its French and singing as both of them don't require to go outside! 


3. Bake something!-
Well this is obvious, here's a great suggestion.

4. Hot Chocolate and read a book-
Make yourself a salted caramel hot chocolate, grab a good book (I'm reading 'The Girl on the Train by Paula Hawkins) and chill on the sofa.  

5. Netflix and Chill-
Pretty much what it says on the tin...

6. Yoga-
This is an odd one for this list, but doing some relaxing yoga poses can help pass those cold nights in as well as improve flexibility and health in the long run. 

7. Organise a Room-
Putting aside an hour of your time to rid yourself of wanted clothes, jewellery or whatever, but having a sort out will not only clear your mind but clear extra space for Christmas presents. Old clothes can be donated to charity and jewellery can be passed onto family or friends. 

8. Listen to music-
Catching up with the radio or latest music has always been a favourite pass-time of mine. Find some new music using Spotify, Youtube or by scanning the radio. 

9. Start writing-
Whether its a novel, screenplay or a set of poems, let the weather inspire you to write something amazing.

10. Cook an incredible meal-
Starter, Main course, and Dessert for yourself and test those cooking skills.

The Cake and Bake Show Haul 2015

Well I've had fun! Stuffing my face with cake and free samples. Did any of you readers get the chance to visit the Cake and Bake Show in London this year? My friend Lucy and I are making this an annual 'thing' (You can read last years post here). I was hoping that I would do a video on it... until my camera broke.

Thats right. On the one day of filming I REALLY  needed a good camera... erg. Tech. Such is life. I thought I would do a blog post on what I purchased.


Firstly, food because... food. I grabbed some Emily Apple and Banana Fruit crisps. But these are the best crisps I've ever had. They were just soft enough in texture not to be soggy but crisp enough to crunch on and not break your teeth. The flavours are true fruit flavours. Seriously, totally worth buying! 

I got a super weird gizmo. Its a peeler. BUT NOT JUST A PEELER! Its a julienne vegetable and fruit peeler with a cool attachment to make noodles from veg. Lucy was full on impressed with this, that she didn't hesitate in buying it. I was convinced to get one also and the peeler does assist me in daily cooking tasks.

I also got a new piping bag and nozzles... pretty standard. 


For my Halloween bakes this year, I got some pretty sprinkles and cupcake cases from one of my personal favourite places to shop, Scrumptious. I bought some green, purple and orange sprinkles as well as some jazzy violet sprinkles. They have a great selection of sprinkles, decorating materials and cases. I did get some adorable ghostly cupcake cases as well as some Christmasy ones (don't judge me I know its only October). 

To stuff my face with, I got marshmallows from both 'The Marshmallowist' and 'The Marshmallow Company'. From the Marshmallowist, I got strawberry and basil, blueberry and gin, lemon and coconut flavours. Now, I must be truthful, the flavours didn't really come through apart from the coconut. I haven't tried 'The Marhmallow Company' marshmallows yet but I will do and will add what I think here.

I did get some special icing sugars, like I do every year, from another one of my favourite companies: Sugar and Crumbs. I bought: 'Santa's Snowball' which tastes like white chocolate and marshmallows (yum!!), 'Christmas Punch' which tastes like mulled wine and lastly, 'Apple Crumble'... which is what you expect. They make great buttercreams, or as a substitute for caster sugar in cakes.

Fat Friday #24 Mulled Wine Cupcakes


 Its been 24 weeks since Fat Friday has graced this blog. Do you remember the first Fat Friday? The title did not even grace the screen at this stage. But here we are! I'm hoping that in 2015, there will be more blog posts will continue and there will be plenty more! But back to this Fridays post.
If your feeling the January blues, why not bring back some of the Christmas magic? These mulled wine cupcakes have a hint of spice and chocolate. Along with the icing it makes these cupcakes a real festive treat... in January...
Recipe Name: Mulled Wine Cupcakes (Recipe adapted from Primrose Celebrations by Lisa Thomas and Martha Swift)
Recipe: 12 cupcakes 

Cupcakes:
·90g butter
·200g soft dark brown sugar
·50g granulated sugar
·1 egg plus an egg yolk
·175ml mulled wine (try this recipe)
·1 teaspoon orange juice
·¼ teaspoon bicarbonate of soda
·1/2 teaspoon baking powder
·¼ teaspoon salt
·½ teaspoon ground cinnamon
·50g cocoa powder
·140g plain flour
Buttercream:
·50g unsalted butter
·Juice and zest of ½ orange
·¼ teaspoon ground cinnamon
·175g icing sugar
·125g mascarpone

Equipment:
·12 hole muffin tin lined with tins
·Hand whisk/wooden spoon
·Bowl x 3
·Knife
·Chopping board
·Saucepan x 2
· Jug
·Sprinkles
 
Cake
1.Preheat the oven to 180c/350f/gas mark 4. Line the muffin tray. 
2.Cream the butter and sugar until pale and fluffy.
3.Add the egg and egg yolk, one at a time and mix,
4.Add the mulled wine and orange juice and mix until evenly combined.
5.Fold in the dry ingredients with a metal spoon until just combined.
6.Carefully spoon the cake mixture into the paper cases. Add a piece of chopped up galaxy bar to each cupcake and push it down into the cupcake.
7.Bake for 20 minutes until slightly raised and golden. Leave the cupcakes to cool in the muffin tray for 10 minutes. Then place on a wire rack to completely cool.

For the butter cream
1.Place the butter, orange juice, zest, cinnamon and half of the icing sugar in a bowl and beat with a hand whisk until smooth.
2.Add the remaining icing sugar and beat again.
3.Beat the mascarpone on a medium speed for about 30 seconds until just combined.
4.Place in the fridge until you’re ready to ice the cupcakes.

To finish
1.Ice the cooled cupcakes with a swirl or with a piped rose and sprinkle with sprinkles or glitter!

What I got For Christmas 2014

I'm very lucky to have friends and family who know me very well. They know that getting food and baking related gifts is always a winner. I'm so grateful for all my gifts this year, and I thought I would share with you readers what I got. (Its also a thank-you post as well :))  
One of the coolest notebooks that I've ever received is the 'Notes of a Baking Genius'. Which sums me up perfectly! Which my friends Lucy and Ben got me. I'm also in love with my cute cupcake little diary which I'll be documenting my blog post dates and college deadlines (Thanks Nan and Gramps). The baking dvd and book combo my mum got, when I have a moment I'll have to watch it (Thanks Mum!) Also, the tea towels my Mum got me as well, which are very pretty.
 I got the Great British Bake Off Showstoppers (thankies Sofia!) which I've been browsing for my next bake. Also, I got the latest Primrose Bakery book which is all about Christmas cakes and bakes (again thank you Mum). I haven't had a chance to look at this one, but I'm looking forward to reading it. Another fantastic gift is the green tea-towel which has written on here: "1. Bake Cake, 2. Accidentally eat it all myself." Again, Lucy and Ben nailed it, thank you!

Another couple of lovely gifts I got were from 2 good friends of mine, unfortunately I was too stupid to take any pictures of them. I opened them up at different times before Christmas and, I tend to get a bit over excited, so I ripped them to shreds. Firstly, I received a pretty blue owl mug and Instant Chai Latte mix that I got from Chloe. I wish I had taken a picture of the whole thing wrapped up because it was so pretty. Many thankies Chloe! Also, my friend Zoe knows me very well in my love off all things coffee related and she got Starbucks Hot Chocolate Mixes *Homer Simpson Drool*. Thanks Zoe!! I'm also very lucky in getting my first ever blowtorch, which is a girly pink! I also got 2 adorable little heart shaped crème brulee pots with the blowtorch! Thanks Chantelle and Nicky, I can't wait to use this!

Lastly, Rob got me the coolest thing ever: a Rice Cube! (didn't take pictures was to busy being a child and opening them up). Its a cute little device that makes sushi simple. I can't wait to start playing with it. Rob also got me a traditional bamboo steamer, presumably to go with my Rice Cube. Thank you so much Rob!

The next gift has nothing to do with baking at all, but it definitely deserves a mention. Its a zombie desktop shooting set! I've got a pencil gun with rubber band shots and zombie rubber targets. I keep getting distracted cause they need to be shot at! (Lucy and Ben woo!! Thank you very very much for this!)
I did get more pressies but they were more skincare related and there are plenty of blogs that showcase beauty and make-up bits. This be a foodie blog and make-up is not really my domain anyway.

Fat Friday #23 Salted Caramel Cupcakes


Happy New Year Folks! Oh my goodness! Its the new year already? Oh crap, here come the new year resolutions. I might do a separate post on my new year resolutions (if any!). So this is the first Fat Friday of 2015.... take that diet new year resolutions! Also I have to apologise for the lack of a photo. The file got corrupted during editing and I had to delete the original, so sorry about that. Great start to the new year, enjoy this recipe!


Recipe: 12 cupcakes (Recipe adapted from Primrose Celebrations by Lisa Thomas and Martha Swift)   

Cake:
·110g unsalted butter
·225g golden caster sugar
·2 large eggs
·1 vanilla pod, with the seeds scraped out
·120ml whole milk
·150g self-raising flour
·125g plain flour
·1 bar of caramel galaxy chocolate bar

Buttercream:
·110g granulated sugar
·3 tablespoons water
·125ml double cream
·1 teaspoon Maldon salt
·200g butter
·400g icing sugar
Equipment:
·12 hole muffin tin lined with tins
·Hand whisk/wooden spoon
·Bowl x 3
·Knife
·Chopping board
·Saucepan x 2
·Jug
 
 Method
1.Preheat the oven to 180c/350f/gas mark 4. Line the muffin tray. 
2.Cream the butter and sugar until pale and fluffy.
3.Add the eggs, one at a time and mix until combined.
4.Place the vanilla seeds and milk in a jug.
5.Combine the flours in a separate bowl.
6.Add the flour and milk mixture in thirds, one at a time and mixing in between, into creamed mixture.
7.Carefully spoon the cake mixture into the paper cases. Add a piece of chopped up galaxy bar to each cupcake and push it down into the cupcake.
8.Bake for 25 minutes until slightly raised and golden. Leave the cupcakes to cool in the muffin tray for 10 minutes. Then place on a wire rack to completely cool.
For the butter cream
1.Place the granulated sugar and water in a saucepan on a medium heat. Do not stir the mixture but just swirl it once and a while.
2.While the granulated sugar is boiling, pour the cream and salt in a small bowl to heat gently.
3.Once the granulated sugar has turned an amber colour, remove from heat and immediately add a little cream.
4.Stir with a wooden spoon to combine, be careful as it may spit.
5.Add the remaining cream in small amounts, stirring constantly. Once all the cream has been incorporated, transfer into a separate bowl to cool.
6.Once the salted caramel sauce is cooled, beat it with the butter. Add about half of the icing sugar and beat until combined.
7.Add the rest of the icing sugar until smooth.

To finish
1.The cooled cupcakes with a swirl or with a piped rose and sprinkle with glitter and decorations that you like.

Fat Friday #22 Homemade Mulled Wine



I hope you all had a wonderful Christmas fellow food lovers. Do you overstuff your faces on chocolate and turkey? I hope so! (Just not at the same time at least!) I'm still in a festive mood and am still enjoying my mulled wine left over from Christmas. If you've never made your own, its worth making some as it is really easy to make. Mulled wine solves everything.
Got unexpected friends coming over and want to served something special? Mulled wine solves it. Talkative relatives? Mulled wine solves it and dulls the noise coming from their mouths. Had a rough shift at work? Mulled wine solves it. Even at 3pm in the afternoon.... I don't have a mulled wine alcohol problem!


Recipe: Makes 4 servings (Recipe inspired by Boutique Baking by Peggy Porschen)
Ingredients:
·       1 orange, plus a extra orange slices to serve
·       1 bottle red wine
·       1 teaspoon of ground ginger
·       100ml water
·       45g sugar
·       1 teaspoon ground cloves
·       2 teaspoons ground cinnamon
·       ½ teaspoon ground nutmeg
·       1 star anise, crushed

Equipment:
·       Saucepan
·       Fine sieve
·       Serving glasses or mugs
·       Peeler
·       Knife

Method
1.    Peel the rind from the orange and cut the orange in half.
2.    Place the peel, orange halves and the rest of the ingredients into the saucepan. Warm for about 20 minutes. Don’t allow to boil.
3.    Take pan off the heat and cover the saucepan with a lid and allow to infuse for 30 minutes.
4.    Strain the mulled wine through a sieve to remove the solid ingredients.
5.    Serve warm in glasses with slices of orange.

Fat Friday #20 Chocolate Orange Tart


Its right in the middle of December at this point and I'm sure that most of you are either done your Christmas shopping early or are struggling fighting the crowds for those pressies. Well if your like me the main concern is food, especially at this time of year! I'm think rich, decadent, comfort food which is perfect for Fat Friday. This Chocolate Orange Tart will delight as well as impress on the table. Serve with a creamy vanilla ice-cream and chocolate sauce if need more of a chocolate hit!
I must state that I'm giving full credit to my friend and college buddy for the lovely photo. Why not pay her a visit on her cake website?
 
 
Recipe: Makes 1 tart
·       450g dark chocolate
·       300g butter
·       3 eggs
·       3 egg yolks
·       90g caster sugar
·       2 oranges zested

Pate Brisee:
·       250g soft flour
·       205g very cold butter
·       5g salt
·       55g ice cold water

Equipment
·       Bowl
·       Saucepan
·       Bowl
·       Jug
·       Wooden spoon
·       Rolling pin
·       Knife
·       Chopping board
·       4 small round tins
·       Baking beans
·       Baking sheet lined with silicone paper
·       Cling film
·       Fork

For the Pastry
1.    Rub the flour, salt and butter together until just combined. If you over work the mix, the butter will mix too much. 
2.    Add the iced water and bring the dough together.
3.    Once the dough has been brought together wrap in a neat parcel and chill in the fridge while you make the other parts of the dish.
4.    Preheat oven to Gas Mark 4/180c/350f
5.    Cut the chilled dough into 4 pieces. Roll out the dough on a lightly floured surface, until about 2 mm thick.
6.    Line the metal cases with the dough and roughly chop any remaining edges. Prick the dough base lightly with a fork.
7.    Place a little clingfilm into the dough cases and fill with baking beans.
8.    Blind bake for 18 minutes or until completely cooked through.
9.    Take the baking beans out of the tart and bake a little longer to dry the cases out.

Tart Filling:
1.    Melt the butter and chocolate together in the microwave or over a bowl of hot water.
2.    In a separate bowl whisk the eggs and sugar together.
3.    Mix the orange zest into the chocolate.
4.    Pour the chocolate into the egg mixture slowly and whisk.

To Finish:
1.    Pour the chocolate filling into the tart casing and bake on 170c/325f/Gas Mark 3/ for 12 minutes.
2.    Once cooked and cooled. Place the tart in the fridge overnight.
