Fat Friday #46 Red Berry Brownie

Happy Friday! Nothing better then a sweet, tart and chocolatey brownie to kickstart the weekend! This recipe is adapted as I actually ran out of sugar, so I used icing sugar instead. The result was amazingly fudgey and very chocolately. Give them a bake this weekend!

Recipe (Adapted from Primrose Bakery Everyday by Martha Swift
Ingredients:

  • 250g unsalted butter
  • 75g golden caster sugar
  • 75g icing sugar
  • 40g cocoa powder
  • 150g plain flour
  • 1/4 teaspoon baking powder
  • 150g dark chocolate chunks
  • 150g white chocolate chunks
  • 200g fresh strawberries and raspberries (chopped)
  • 3 eggs
Equipment:
  • Microwave/Saucepan filled with water, with a heatproof bowl on top
  • Brownie tin lined with greaseproof paper
  • Bowl x 2
  • Wooden spoon

Method:
1) Preheat the oven to GM 4/180c/350f. Grease and line with greaseproof paper.
2) Melt the butter on the hob over a pan of hot water or microwave in the oven until completely melted. Set aside.
3) In another bowl, put the sugar, cocoa powder, baking powder, flour and chocolate chunks and mix until combined.
4) Pour the melted butter into the dry ingredients, and stir (like a boss) until thoroughly mixed in. 
5) Add the strawberries and raspberries and very gently fold them into the mixture.
6) Pour the batter into prepared tin and spread evenly.
7) Bake for 30-35 minutes. Allow to cool into the tin.

The Cake and Bake Show Haul 2015

Well I've had fun! Stuffing my face with cake and free samples. Did any of you readers get the chance to visit the Cake and Bake Show in London this year? My friend Lucy and I are making this an annual 'thing' (You can read last years post here). I was hoping that I would do a video on it... until my camera broke.

Thats right. On the one day of filming I REALLY  needed a good camera... erg. Tech. Such is life. I thought I would do a blog post on what I purchased.


Firstly, food because... food. I grabbed some Emily Apple and Banana Fruit crisps. But these are the best crisps I've ever had. They were just soft enough in texture not to be soggy but crisp enough to crunch on and not break your teeth. The flavours are true fruit flavours. Seriously, totally worth buying! 

I got a super weird gizmo. Its a peeler. BUT NOT JUST A PEELER! Its a julienne vegetable and fruit peeler with a cool attachment to make noodles from veg. Lucy was full on impressed with this, that she didn't hesitate in buying it. I was convinced to get one also and the peeler does assist me in daily cooking tasks.

I also got a new piping bag and nozzles... pretty standard. 


For my Halloween bakes this year, I got some pretty sprinkles and cupcake cases from one of my personal favourite places to shop, Scrumptious. I bought some green, purple and orange sprinkles as well as some jazzy violet sprinkles. They have a great selection of sprinkles, decorating materials and cases. I did get some adorable ghostly cupcake cases as well as some Christmasy ones (don't judge me I know its only October). 

To stuff my face with, I got marshmallows from both 'The Marshmallowist' and 'The Marshmallow Company'. From the Marshmallowist, I got strawberry and basil, blueberry and gin, lemon and coconut flavours. Now, I must be truthful, the flavours didn't really come through apart from the coconut. I haven't tried 'The Marhmallow Company' marshmallows yet but I will do and will add what I think here.

I did get some special icing sugars, like I do every year, from another one of my favourite companies: Sugar and Crumbs. I bought: 'Santa's Snowball' which tastes like white chocolate and marshmallows (yum!!), 'Christmas Punch' which tastes like mulled wine and lastly, 'Apple Crumble'... which is what you expect. They make great buttercreams, or as a substitute for caster sugar in cakes.

Fat Friday #28 Gluten Free Raspberry Love Hearts


It's a week and a day until dreaded Valentines day. I'm sure you know how I feel about Valentines day here. Erg, but its a good excuse to bake cute heart shaped things, such as this weeks Fat Friday. We're looking at gluten free raspberry love hearts. You can make them with normal plain flour, but I chose to use gluten free flour to use it up. These are great on there own or served with ice cream or whipped cream as a dessert. The recipe is easy to make so you can make them up to the day before as a surprise for your valentine. Or you can scoff them yourself. Either way!

 
·       100g ground almonds
·       200g Gluten free plain flour (I used Dove brand), sifted
·       80g icing sugar
·       Pinch of salt
·       125g unsalted butter, diced and chilled
·       3 large egg yolks
Raspberry filling:
·       200g fresh raspberries
·       2 teaspoons cornflour
·       3 tablespoons icing sugar, plus a extra for dusting
Equipment:
·       Bowl
·       Sieve
·       Saucepan
·       Heatproof bowl
·       Clingfilm
·       8cm heart cookie cutter
·       Smaller heart cookie cutter
·       Baking sheet lined with baking parchment x 2
·       Rolling pin

Biscuit Method:
1.    Put the almonds, flour, salt and icing sugar into a bowl. Add the butter and rub into the dry ingredients until crumbly.
2.    Add the egg yolks until the mixture forms a dough. Leave in the fridge for 15 minutes.
3.    Roll out the dough until 2mm thickness on a lightly floured surface. Cut out the heart shapes, then use the smaller cutter to cut out the middle.
4.    Gather up the trimmings, re-roll and repeat until no more dough is left. Make 12 hearts and 12 smaller hearts.
5.    Place the hearts on a baking sheet and chill in the fridge for another 15 minutes.
6.    Preheat the oven to 180C/350F/Gas Mark 4. Bake for 12 minutes until lightly coloured.
7.    Leave the biscuits on the baking sheets for 10 minutes to cool. Transfer to wire rack.

Filling Method:
1.    Put the raspberries, icing sugar and cornflour in saucepan on a medium heat.
2.    Stir gently until the juices start to run.
3.    Bring to the boil and simmer for 2 minutes, stirring until thick.
4.    Pour into a heatproof bowl to cool.

To finish:
1.    Spread the cold raspberry filling over the uncut biscuits, top with an uncut biscuit.
2.    Dust with icing sugar and consume with a loved one or stuff by yourself while watching a tacky rom-com or a horror film each to their own.

Fat Friday #16 White Treacle Tart


*In cockney accent* "Alright treacle? Its Fat Friday. Fancy a bit of treacle for my treacle?" ... Ok lets just get on with it. Happy Fat Friday and happy baking! (Again sorry about the lack of pictures, its pastry class moment again...)
 
Ingredients:
For the pate sucre

·260g plain flour, plus a little extra
·100g icing sugar, plus a little extra
·30g ground almonds
·125g unsalted butter
·3 eggs, 1 egg yolk to wash the bottom of the tart
·1 tsp milk

For the white treacle filling:
·60g unsalted butter
·1 egg
·1 egg yolk
·3 tbsp double cream
·6g salt
·450g golden syrup
·120g white bread crumbs

Equipment:
·Saucepan
·Whisk
·Mixing bowl
·Fork
·Wooden spoon
·Sieve
·Rolling pin
·Knife
·9 inch baking ring
·Baking sheet
·Baking beans
·Cling film

For the pate sucre:

1.Place the flour, icing sugar, almonds and butter in a mixing bowl, rub the mixture together.
2.Add the 2 eggs and mix well. Cover and rest in the fridge for 30 minutes.
3.Preheat oven to 180c/350f/ Gas Mark 4.
4.Dust the work surface with icing sugar. Roll out the pastry to about 2mm thick.
5.Line the tart ring with the pastry, letting it hand over the sides. Cover with cling film and fill the tart base with baking beans.
6.Bake blind for 20 minutes or until the case is cooked through and lightly golden. Remove the baking beans and cling film.
7.Brush the bottom of the tart with a little egg yolk to crisp up the bottom.
8.Place the tart back in the oven for 5 minutes to crispy up the base.

For the filling:
1.Melt the butter, cream and golden syrup in a saucepan until liquid.
2.Once melted put in a separate bowl to cool. Whisk in the eggs a little at a time.
3.Mix in the breadcrumbs into the liquid ingredients.

To Finish:
1.Pour the treacle mixture into the tart case and bake for 20 minutes on Gas Mark 4/180c/350f.

Fat Friday #13 Blackberry Lemonade Marshmallows


Its unlucky week number 13 for Fat Friday! This week we're  looking at blackberry lemonade marshmallows. The tartness of the citric acid makes the white half really taste like lemonade. The blackberry was added because it's blackberry season here in the UK. It's actually a coincidence that this recipe is being published on week 13, because the first time I made marshmallows it went so wrong that I nearly cried with the amount of mess that was leftover. This time it much better than expected and they were so tasty. I gave them to a couple of friends at college and they thought they were lovely as well. I would suggest that you eat the marshmallows as soon as possible because they will sweat once you dust them with icing sugar. 




Recipe: 30 minutes (Depending on how many you cut) (Adapted recipe from Sweet Things by Annie Rigg)

Ingredients:
·       2 tablespoons corn-flour
·       2 tablespoons icing sugar
·       Sunflower oil
·       The zest of one lemon and the juice
·       200g blackberries
·       350g caster sugar
·       ½ teaspoon vanilla extract
·       6 gelatine leaves
·       2 large egg whites
·       A little salt
·       ¼ citric acid

Equipment:
·       20cm square baking tin
·       Baking sheet
·       Silicone paper x 2
·       Sugar thermometer
·       Knife
·       Saucepan
·       Blender
·       Free-Standing whisk
·       Rubber spatula
·       Palette knife
·       Sieve
·       Fine sieve

Method
1.    Mix the cornflour and icing sugar together in a bowl. Lightly grease the tin with the sunflower oil and line with silicone paper, lightly grease this again. Dust with the icing sugar and cornflour mix and save the rest for later.  
2.    Finely great the zest and save the juice and put aside.
3.    Place a saucepan with the blackberries and 1 tablespoon of sugar on low heat. Cook until blackberries have burst and they become soft.
4.    Using a blender blend until really soft and push the blackberry puree through a fine sieve to remove the pips.
5.    Cook the blackberry puree until it becomes a jam like consistency. Add the vanilla and remove from heat.
6.    Cover the gelatine in cold water in a separate bowl.
7.    In a free-stand mixer place the egg whites, salt and 1 tablespoon of caster sugar.
8.    Tip the rest of the caster sugar into a clean saucepan with 150ml of  water and heat gently to dissolve the sugar. Bring the syrup to boil until it reaches 120c/248f.
9.    Working fast switch the free standing whisk on to whisk the egg whites fast until the hold a stiff peak.
10.    Drain the gelatine and add to the sugar syrup, combine with a rubber spatula.
11.   With the mixture running on a medium speed pour the sugar syrup into the egg whites (be careful not to get any on whisk). After whisking for 3 minutes it should have doubled in size, it should be thick and glossy.
12.   Put half the mixture in another bowl and add the reserved lemon zest and citric acid. Mix well, spread in the prepared baking tin and spread evenly with a palette knife.
13.  Fold the blackberry puree into the other half of the marshmallow mixture and combine.
14.  Smooth over the lemon marshmallow to create a double layer of marshmallow.
15.  Once completely cold cover the marshmallow with clingfilm and leave to set overnight.
16.   To serve, tip the rest of the cornflour/icing sugar mixture onto a silicone paper lined tray.
17. Tip the marshmallow out of the lined, carefully peel the paper off.
18. Cut the marshmallow into pieces and roll in the icing sugar/cornflour mixture to coat.
