Mother's Day Decoration Class at Primrose Bakery


It would be completely wrong if I had a baking blog and not tell you about my visit to Primrose Bakery, in Covent Garden. I was lucky enough to go a Mother’s Day themed class to bring home some cupcakes as a gift for mum. (She’s cool about eating cupcakes, just not decorating them)

Primrose Bakery was first founded in 2004 by Martha Swift and Lisa Thomas who started baking from their own kitchen in North London, for children’s parties. They realised that cupcakes were perfect for every occasion and versatile. They soon started to sell their cakes to a local delicatessen and the business grew when they were approached by Selfridges Food Hall.  In 2006, the first bakery in Primrose Hill opened and history was made. Now with 2 shops (with another one on the way!) and 2 cookbooks  and my sources at the Primrose class, tell me that a new book is coming out roughly about October time, which features some of the very trendy cocktail cupcakes (can’t go wrong with a boozy cake.)

Now if I have to be honest, I felt slightly intimidated going into a cupcake class on my own. I was expecting that there would be mother and daughters together and that made me feel a little like the odd one out. However, once I stepped through the threshold that feeling was replaced by one of welcoming. The pastel hues and the smell of freshly baked cupcakes just lift’s the spirit and puts a smile on your face.

I was quickly greeted by the lovely Laura, one of the bakers and helpful Becky, one of front of house staff. They asked me my name and gave me a name sticker and I was offered a drink. Diet coke, of course, and once all the class had arrived we were ready to begin.

The start of the class began with Laura showing us how to make a basic vanilla buttercream. Now, I have loads of experience making buttercream, so to me I wanted to get right down to the decorating. But some of the girls I spoke too weren't familiar with making buttercream, so it was something new to them. What was new to me, was the signature Primrose swirl. Laura had demonstrated to the group and she made it look really easy. In practice, it’s very hard. It requires lots of practice and patience. The group I was sitting with all had such a laugh while trying making that swirl.

Both Becky and Laura were ready to lend a hand to show us how to do that lovely swirl. There were cupcakes squashed in hands, melted buttercream on fingers (and into our mouths! The chocolate buttercream was to die for!) and even buttercream in the floor. It took me ages for a decent swirl but finally I got one! Woo!

We were also given a decorating tool kit along with some various coloured buttercreams, floral decorations and sprinkles.

We then decorated mini cupcakes, which I found easier. However the opinions were mixed. The same thing happened with the chocolate buttercream, which I found easier to work with as it was easier to work with, but the girls on the table had mixed opinions.

Laura then showed us how to decorate a cupcake with a flat top so that it makes it easier to write on. Continuing along this line, we were shown how to make a paper piping bag, which I found very difficult to do up until now.  Laura showed us how to fill up our piping bags with buttercream, and pipe out messages on a large cake and on cupcakes. We were given a round sheet of baking parchment to practice writing on.

Since it was a special mother’s day class, we were given a Violet flavoured cupcake to decorate. This was the cupcake I decided to write on. I think it turned out pretty well!

Just at the end of the class were shown how to ice a layer cake the Primrose way. Including making a flat surface, and textured cake.

One thing that I regret is not decorating more cupcakes. I was in such a concentration mode that I only managed to decorate 5 cupcakes in total. I now know for next time, decorate more cakes!
But overall, I was very proud of the end results! My mum loved them so much she was upset about eating them.

Regarding the class, what can I say? It was a pleasure to be there. The whole experience was homely, personal and fun to do. It was a really intimate class and I think that everyone enjoyed the class regardless of their decorating skills.

I almost forgot about the goodie bag! Our cupcakes got packed into boxes, along with a recipe card, postcard signed by Martha Swift and Lisa Thomas and a card for a free cupcake! So was it worth going? Definitely! Even if you just get dragged along with a cupcake fanatic, you'll enjoy the atmosphere. (I'm sure everyone knows a cupcake fanatic.)

Killer Snow-woman, Boyfriends and Cranberry and Orange Cupcakes


"It's only cupcakes Penny, the ingredients don't have to be exact."
"Hey let's eat the batter."
"Look it's a Snow-woman in a Lush bath. It looks like you!"

Some of the best quotes that my boyfriend had blurted out when we were baking cupcakes. 
He doesn't bake much, bless. 
Baking is one of these things that can bring people together. The combination of doing something fun with someone you love as well as dancing around the kitchen to some tacky music to finally decorating the cupcakes and stuffing them in our faces afterwards. 

We did bake and decorate the cupcakes in the end and not just flinging flour at each other. It was lovely to spend some down-time in the kitchen with my better half. We, (well I did really,) decided upon Cranberry and Orange cupcakes with an Orange Cream Cheese Frosting.  


Cupcakes makes 12
  •      228g plain flour
  •      ½  tsp of baking power
  •      1/4 tsp salt
  •      ¼ tsp bicarbonate of soda
  •      1 tsp ground cinnamon
  •      200g caster sugar
  •      2 large eggs
  •      100g sunflower oil
  •      135ml sour cream
  •      1 tsp vanilla extract
  •      Grated orange zest about 1 tea spoon
  •      140g fresh or frozen cranberries, finely chopped

For the Frosting:
  •     175g cream cheese
  •     450g icing sugar, sifted
  •     125g unsalted butter at room temperature
  •     Grated zest of one orange

Equipment
  •  12 hole muffin tray lined with cupcake cases
  • Sieve
  • Knife and chopping board
  • Bowl x 2
  • Electric hand whisk/ mixer 
  • Christmas themed decorations 
  • A bit of tacky Christmas music (optional)


1. Pre-heat the oven to 150c/300f/Gas Mark 2. Line a 12 hole muffin tray with 12 cupcake cases.
2. Cream the eggs and sugar together until pale and fluffy. This should take around 3-5 minutes with an electric hand whisk. Slowly pour in the oil, a little at a time, beating well after each addition, repeat this process with the sour cream and vanilla extract, making sure that everything is well combined. Add the orange zest once everything is well combined.
3. Sift the dry ingredients together in a bowl and then add to the batter and beat well. Finally, fold in the cranberries.
4. Spoon batter into cupcake papers, filling cups about 2/3 full. Bake for 25 minutes or until tester inserted into the centre comes out clean. Remove from oven and cool.
5. To make the frosting place all the ingredients into a mixing bowl and beat well until well combined and the icing is smooth and pale.




My Boyfriend came up with a story for the snowman on these cakes: "This is a single snowman all on his own and no one to talk too."

 "Next he meets a lovely snow-woman called Penny and they fall in love."
"Awww That's sweet."
"Not for long. The snowman is beginning to annoy the snow-woman. He keeps messing up the cupcake decorations and weighing out the ingredients...."

"So she kills him for messing up her cupcakes."
 "To celebrate her cupcakes no longer getting messed up. She has a Lush bath. THE END!"

I stood there in an annoyed silence with which he stroked my arm and said:
"LOVE YOU!" and he turned back to decorating cupcakes with a silly smile on his face.

How Not Writing a List Turned into The Citrus Birthday Cake

I love lists
They rule my life. I make so many lists.

You get the idea. I do these lists so that I can organise my time and not forget things. I've been so busy this year, as most people are, I've been extra busy due to coursework etc. I didn't write out a present list. Which is the most important list because it guides me on what gifts I need to get for Christmas and December Birthdays! 
I managed ok but sadly, I forgot my next door neighbours birthday.  I was running low on cash and I winged it. I did get her a shower set from the Body Shop but I felt so bad. 

Suddenly a thought occurred to me.... "Penny... you silly Christmas elf... you can bake her a birthday cake!" and I thought that it would be an excellent opportunity to show off my baking skills and also she love cakes. I do often send her some random thing I've baked and she will always give me an honest opinion

So if she reads it, this is my confession. I didn't mean to forget your birthday Louise but at least I made you a lovely cake!

This recipe was adapted from an old vanilla recipe. You can add or take away the lemon juice and zest and replace with 2 teaspoons of vanilla extract. 

Recipe: Sponge
  •        225g unsalted butter, plus a little extra for greasing
  •        225 caster sugar
  •        210g self raising flour, sifted
  •        25g cornflour
  •        1 teaspoon baking powder
  •        4 large eggs
  •        1 teaspoon lemon juice
  •        2 teaspoons Lemon zest
  •        3 tablespoons semi skimmed milk

Equipment:
  •        Sieve
  •        2 x 20 cm tins
  •        Greaseproof Paper
  •        Bowl
  •        Mixer
  •      Grater

 1.    Preheat oven to 180c/350f/ Gas Mark 4 and line two 20cm cake tines with greaseproof paper.
2.    Cream the butter and sugar in a bowl until the mixture is pale and smooth. Combine the dry ingredients in a separate bowl. Add the eggs to the creamed mixture, one at a time, mixing for a few minutes after each addition, altering with the dry ingredients, and finally the vanilla extract and the milk. Beat well after each addition, but again don’t overbeat.
3.    Divide the mixture evenly between the tins and bake in the oven for about 25 minutes until raised and golden brown, Insert a skewer in the centre of one of the cake- it should come out clean.

Recipe: Buttercream
  • 110g unsalted butter, at room temperature
  • 2 tablespoons freshly squeezed lemon juice
  • Grated zest of 1-2 unwaxed lemons 2 teaspoons
  • 500g icing sugar, sifted
Equipment:
  •        Sieve
  •        Grater
  •        Bowl
  •        Mixer
  •     Piping bag and a star nozzle
  •     Palette knife

  1.     In a large mixing bowl beat the butter, lemon juice, zest and half the icing sugar until smooth-this can take several minutes using a electric hand mixer. Gradually add the reminder of the icing sugar and beat again until smooth and creamy. Decorate as you like. I used a palette knife to smooth the buttercream on and then piped rosettes on the top.

Tutorial: Princess Mini Cakes

As the title suggest this is a tutorial. My first ever tutorial. (Yay!)
Where did the idea come from? I'm going to Euro Disney and love all things Disney, otherwise what's the point of going to Disneyland? Anyways, I wanted to do something that celebrated my love of Disney take took form of a cupcake without going over the top. 
As the idea of a cupcake is to keep it simple and elegant. So this tutorial is really simple and is a good excuse to sing well known Disney songs around the kitchen and maybe wear a crown as well.

This tutorial will make 4 pretty Princess Cakes depending on how much buttercream you want to use. I did mine thick so I only make the 4 Princess Cakes.
You will need:
Basic Butterscotch Cupcakes- Make 12 little cakes
  • 100g plain flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 125g unsalted butter
  • 50g caster sugar
  • 2 eggs
  • 75 ml whole milk
  • 1/4 teaspoon of butterscotch essence

For the Butterscotch Buttercream
  • 400g icing sugar
  • 200g unsalted butter
  • 1/4 teaspoon of butterscotch essence


Equipment You Will Need:
  • Cupcake Tin
  • Hand whisk
  • Jug
  • Cupcake Cases

Method
  1. Pre-heat the oven to 180c/350f/Gas Mark 4. 
  2. Place flour, baking powder, sugar, salt and butter together in a bowl.  
  3. Mix together with your fingertips until the mixture resembles fine breadcrumbs.  
  4. In another bowl whisk eggs, milk and essence together until well blended. 
  5. Slowly pour the egg mixture into the dry ingredients, whisking all the time.  
  6. Whisk gently until smooth, being careful not to over-mix. Pour the cake batter into jug to make it easy to handle. 
  7. Place 12 paper cupcakes cases into the cupcake tin. 
  8. Carefully pour all the cake batter into the cases, filling each one only half way.  
  9. Bake for 20-25 mins until springy to touch. 
  10. Leave for a few minutes, the transfer the cupcakes to a wire rack to cool completely.  
  11. To make the frosting, combine the icing sugar, butterscotch extract and butter in a bowl. 
  12. Beat with an electric whisk for around 5 mins until light and fluffy.  
  13. Check the cakes have completely cooled or they will melt the frosting.


So while your cake's are cooling you need to make your toppers:
Equipment You Will Need:
  • Princess Toppers (I got these from Kreations Parties )
  • Lolly-sticks/sucker-sticks/toothpicks
  • Scissors
  • Tape
Method:
  1. Cut out your princesses carefully. Remember when using scissors be very careful.
  2. Place your sticks in the middle of the cut out at the back. 
  3. Tape the stick in the middle and make sure that its secure.

Once you've got your princess cake toppers ready and your cupcakes are cool need to start building your cake 'dresses'. Essentially, its 2 cupcakes to one dress just like the picture below. To secure the two cakes together, level the cakes carefully with a knife and spread a layer of buttercream between them.

To Decorate the Cakes You Will Need:
  • Buttercream used with the recipe above
  • Food Paste Colours in princess colours (See left)
  • Glitter
  • Piping bag with a star nozzle
  • A small palette knife.



Method: 
  1. Once the cakes have been 'glued' together with the buttercream. Separate the buttercream according to which colour's you want. 
  2. Cover your cakes in a layer of buttercream and put in the fridge to create a crumb layer. Do this for every cake.
  3. Once the cakes have chilled in the fridge for an hour, smooth on the buttercream and decorate to your liking!

I used plain simple colours with a little glitter and piped on a couple of details. I wanted it to remain simple but here are the results:
